Thai technique.
Ribeye quality.
In Thailand, grilled beef dishes like Nuar Yang have been a cornerstone of northeastern Thai cuisine for centuries — marinated, charred over coals, served with sticky rice and a punchy jaew sauce made from roasted chilies and toasted rice powder.
At Wan Waan, we bring that same spirit to Chelsea — using ribeye for its marbling and flavor, and pairing it with sauces and preparations that have been refined over generations.
The cut
Rib-eye — chosen for its fat marbling, which holds up beautifully against bold Thai spices without being overwhelmed.
Khao Soi origin
A Northern Thai specialty from Chiang Mai, traditionally made with braised chicken. Wan Waan offers three versions — duck, soft shell crab, and ribeye.
Jaew sauce
A traditional Isan dipping sauce made from roasted chilies, toasted rice, fish sauce, and lime. Sharp, smoky, irreplaceable.
